Here is my recipe for FAILED Russian Tea Cakes:
6 T of confectioner's sugar
2 3/4 cups of flour
2 sticks butter
1 tsp vanilla
pinch salt
I used an extra 3/4 cup of flour to replace the 1 cup of nuts that I omitted. The result was a crumbly, tasteless, dry mess. The confectioner's sugar isn't sticking to them at all. They fall apart when you take a bite. This recipe definitely needs more fat.
Last year I made the recipe properly but with whole sunflower seeds, which I didn't like.
I also made the cookies with 2 cups of flour and just omitted the nuts, and while they tasted ok, they were too flat. Russian tea cakes should look like snowballs.
I need to find something to replace the cup of finely chopped nuts that has a pleasant taste and contains some fat.
I will definitely try again with ground sunflower seeds but I'm still looking for a suitable nut replacement.
